CALAMARI SALAD


WITH QUINOA


SERVES 8 (AS A SIDE)


A super fast and fresh salad with
protein-rich quinoa as the base that
can be served hot or cold.


2 cups vegetable stock
1 cup quinoa, rinsed well
2 squid tubes, sliced into fine rings
⅓ cup extra-virgin olive oil
juice of one lemon
1 bunch of dill, chopped finely
sea salt and pepper, to taste


In a pot, place stock and quinoa.
Simmer with the lid off for 20 minutes
until all stock is absorbed and quinoa
is tender. While this is cooking, grill
the calamari rings on the flat plate of
the BBQ for a minute or two each side.
They cook very quickly, so be careful
not to overcook them so they don’t
become rubbery.
Place cooked calamari in a bowl and
dress with oil, lemon, dill, and salt and
pepper (to taste) and combine well.
Place quinoa on a serving plate and
spoon calamari and dressing over the
top. Serve hot.
