SIMPLE AND STYLISH


YOU WILL NEED
EDIBLES:


  • 18cm (7in) sugarpaste covered
    square cake on a 25cm (10in)
    square board which should
    also be covered.

  • 18cm (7in) square cake (iced)

  • 50g sugarpaste: white

  • 50g sugarpaste: red

  • 50g sugarpaste: green

  • 1tsp CMC, Tylose or gum
    tragacanth

  • food colour: red and gold

  • edible balls: gold

  • 3 tbsp royal icing


EQUIPMENT:


  • 25cm (10in) square board
    (iced)

  • letter templates

  • baking parchment

  • pencil

  • scissors

  • craft knife

  • fine paintbrush

  • rolling pin

  • piping bags

  • no.1 piping tip

  • holly cutter

  • ribbon


Using lettering to spell out an event can be an easy way to create a stylish cake. It could
be used for other occasions too. You could spell out ‘party’ or ‘wedding’ on a cake or the
recipient’s name. The internet is an extremely useful source for different styles of lettering
so mix and match different styles. The lettering on this cake is created using a mixture of
techniques. Some are runouts, some are cut outs.

CHRISTMAS


Letters


1 Trace the letters onto baking
paper. Place the letters ‘R’ and
‘A’ under another sheet of baking
paper and pipe around the outlines
using a little red royal icing in a
piping bag fitted with a no.1 piping
tip. Make a couple of spares.

2 Mix a tiny bit of water into about a
tablespoon of red royal icing. When
you lift the knife out of the icing the
‘tail’ should disappear in a count of
three. Place the icing into a piping bag
and close it. Snip a little off the end of
the bag and flood the letter outlines.
Leave to dry, preferably overnight.

3 Carefully cut the remaining letters
out of baking paper so that they
can be used as templates. Thinly roll
out the green sugarpaste. Place the
letter ‘C’ on top and cut around it.

4 Cut out the letters ‘t’ and ‘m’
in green and place to one side
to harden.

5 Roll out the white sugarpaste
and cut out the letters ‘h’, ‘i’ and
the small ‘s’. Roll out the red
sugarpaste and cut out the big
letter ‘S’. Use a piping tip to cut out
the dot for the ‘i’.

6 Decorate the green letters ‘C’
and ‘m’ with edible gold balls,
sticking the balls in place with
dots of royal icing. Pipe white dots
onto the letter ‘t’.
