7 Paint the letter ‘i’ with gold
food colour and when dry, pipe an
outline around the edge with red
royal icing.

8 Paint diagonal stripes with red
food colour on the letters ‘h’ and
the small ‘s’ then pipe a red royal
icing outline around the edges.

9 Cut out a large red letter ‘S’.
Using a no.1 piping tip, pipe
vertical lines down the length of the
letter then lines across.

10 Fill in alternative squares with
dots of white royal icing to create a
chequered effect.

11 Place the letters in position on
the cake and glue in place with dots
of royal icing. Pipe white dots on to
the letters ‘R’ and ‘A’.

12 To fi nish, cut out eleven icing
holly leaves and make some icing
dots for berries. Stick three leaves
and three berries onto the top of
the cake. Add a ribbon around the
base and a few leaves and berries
on the board.
