34 Dampen the circle and cover
the foil ball.

35 Add a fur effect to the
pompom with short flicking
strokes as before.

36 Roll out a little paste to 2mm and
cut out three holly leaves. Airbrush
them green making the centre vein
darker and ensuring the sides are
coloured. Roll three berries and
airbrush red - doing this in a bowl will
prevent them rolling away while you
spray. Leave to dry.

37 Attach the face to the cake with
edible glue so the forehead is just
above the top edge.

38 Add the beard and moustache
allowing the edges of the beard to
sit away from the cake.

39 Attach the hat and stick in the
pompom leaving it sitting away
from the cake a little. Use the tail of
the hat to cover any visible stick.

40 Glue on a ball of paste beside
Santa’s eyebrow and add the
holly leaves. 41 Add the red berries and finish the
board with dark green ribbon.

31 Shape the top of the hat
ensuring it fits Santa’s head, and roll
out a piece for the fur trim to fit.

32 Texturise the fur with short
flicking strokes. Airbrush the hat
red and attach the fur trim.

33 Scrunch up a square of kitchen foil
tightly on the end of a cocktail stick
and cut a circle of paste twice as wide.

28 Take 100g of paste and start to
shape the hat, it should be even
thickness.

29 With your finger, press and thin
out the inside of the curve and trim
away the excess.

30 This will allow a neat fold on the
side of the hat.
