ZUCCHINI AND TOMATO
RELISH
This relish is tangy and full of flavour.
Just pack it into jam jars and use as an
accompaniment with cheese and add to cold
cuts of meat in sandwiches. So good!
TOTAL TIME: 1 hour and 40 mins
MAKES: Around five jam jars
Ingredients
- 3 cupscidervinegar
- 1 ½cupssugar
- 1 tsppicklingspices
- 1 tspyellowmustardseeds
- 1 tspturmeric
- 2 clovesgarlic,finelychopped
- 4 ½cupszucchini,finelychopped
- 2 cupstomatoes,finelychoppedor

oftimes - 3 largecapsicums,redandyellowfor
colour,finelychopped - 1 largeonion,finelychopped
- 1/3 cup salt
Method
In a large saucepan, combine vinegar, sugar,
spices, mustard seeds, turmeric and garlic.
Bring to the boil, reduce heat to medium-
low and simmer for five minutes.
Add vegetables and bring slowly to the
boil. Simmer for 15 minutes.
Pack the relish into clean, sterilised jars
(recycled jam jars with tight seals are ideal
for this mixture to avoid leaks).
