Venisonsteakwithapeppercornsauce
Perfectfor aSundaylunchorentertainingfriends

ingredients
●4 venisonloinsteaks
●3 tbsppeppercorns
●1 knobbutter
●1 onion,finelychopped
●8 tbspbrandy, or a good
dollop
●8 tbspstock
● 6 tbsp double cream

Crushthepeppercornswitha pestleandmortar.Melt
thebutterina saucepanandaddtheonion.Cookuntil
softbutnotbrown.Addthebrandyandflambé;when
theflameshavedieddownaddthestock.Boilfor
aboutthreeminutesthenaddthecream.Allowthe
saucetoheatthroughbut not boil then put to one
sideandkeepwarm.
Heata griddlepanovera highheatandwhenhotadd
thesteaks.Cookquicklyonbothsidesandservewiththe
sauce.Cookthe steaks for longer if you prefer them
well done.
