Chardonnay,

Chile, £13.95: This
is a lovely example of
an approachable and
versatile New World
Chardonnay. It has a pure,
clean character, with fresh
aromas of pear, pineapple
and white blossom, while
the palate is lively and
bright, with refreshing
acidity accompanying
notes of grapefruit pith and
yellow peach. It is ideal in
bringing together all the
bold flavours in the gratin.

Greece,
£11.50: This
Greek wine is from the
up-and-coming white
grape Vidiano, with a
dollop of the intensely
aromatic Muscat tossed
in. It has heady floral and
tropical notes combined
with a striking vibrancy
and complexity. Layers of
cleansing minerality, ripe
peach and apricot, and
fresh herbs are all wrapped
together in a firm structure.

This is a delightfully
rich and creamy
dish, offering
wonderfully bold
and concentrated
flavours. Classic
hearty winter dishes like this are often
overlooked or dismissed in favour of more
contemporary cooking. For me they offer
wonderful versatility and bring together
incredible tastes and textures that are
perfect for keeping us warm in colder
months. Susie has put together some
fabulous, rich flavours here that demand
strong, characterful wines capable of
standing up to the combination of celeriac,

herbs and cream. It’s important to bear
in mind that the flavour profile of the
wine should not overpower the dish, or
vice versa. The tried-and-tested advice
would be match the weight and
flavour of the wine with that of the
food. So, for this robust recipe, I have
chosen three white wines of equal
character, versatility and balance that
will truly enhance the indulgence
of Susie’s sumptuous gratin.
