ingredients
1/2 bowl cannellini beans, 4 cherry tomatoes, 1 clove
of garlic, fresh cilantro, couple olives, 1 tsp capers, 2
tsp sesame olive oil, 3 tsp lemon juice, Himalayan salt.
directions
- Soak overnight the cannelloni beans. Next day
discard the water and wash them under running water
and cook them on the stove with water for 10’ or until
tender then strain them in cold water and reserve. - Preheat the oven 250 degrees Celsius. Cut the
tomatoes in half, place them face up on baking sheet
and brush them with crushed garlic. Bake for 30’. - In a large bowl, mix together sesame oil, lemon
juice, olives, capers, freshly cut cilantro and salt. - Add the cannellini beans to the mixture.
- On a serving plate, place the beans mixed in the
sauce, then add the roasted tomatoes and cut more
cilantro leaves.
