sugarin heatproofbowlofa standmixer
setovera saucepanofgentlysimmering
water and whisk until sugar has dissolved
andmixtureis hot.Transferbowltostand
mixerandwhiskfor6 minutesoruntil
meringueis thick,glossyandcompletely
cooled.Whiskin poppyseeds,then
transfermixturetoa pipingbagfittedwith
a 7mmnozzleandpipein a spiraloverthe
topofthecheesecake,startingfromthe
centreandworkingouttoedges.Using
a kitchenblowtorch,caramelisemeringue.
Serve immediately or chill until needed.
