Sweet potato


‘toast’


As an alternative to a bread-
heavy starter, why not make
a colourful crostini-style bite
with sweet potato bases?

Wash the sweet potatoes, and slice
them into rounds at least half an inch
thick. Brush or rub the slices with the olive
oil, and arrange onto baking trays. Sprinkle
liberally with the seasonings – feel free to
also season with your favourite herbs.

Heat the oven to 200°C, then roast
the slices for 25–30 minutes, or until
golden in colour.

Finish with your favourite toppings


  • hummus is a great option. These
    'toasts' are topped with smooth beetroot
    hummus, some fragrant chopped
    coriander and roasted chickpeas, but the
    options are endless!

SERVES 4

2 large sweet potatoes
olive oil
salt, to taste
pepper, to taste
rosemary, to taste
thyme, to taste
toppings of your choice,
such as hummus and your
favourite chopped herbs
