1
Preheat your oven to 160ºC/ 325ºF
and lightly grease and flour a 10-inch
Bundt or tube pan.
2
In a small bowl, combine the non-
dairy milk with both citrus juices and
set aside to acidify. Using a stand mixer,
cream the butter, sugar, and both zests
together until light and fluffy. Add in the
yogurt, a heaped ½ cup at a time, beating
well after each addition to prevent
unblended lumps from being left behind.
3
In a separate bowl, combine the flour,
baking powder, baking soda, and salt.
Add these dry ingredients into your stand
mixer alternately with the acidified milk
mixture. Mix thoroughly.
4
Drop dollops of the batter evenly into
your prepared Bundt pan and bake
for 65 to 80 minutes, until a toothpick
inserted into the centre comes out clean.
Let the cake cool in the pan for 10 minutes
before turning it out onto a wire rack.
Allow it to cool completely before icing.
5
For the glaze, simply whisk the
sugar and lemon juice together
until smooth and pour over your cake
as desired.
