(^1) / 2 cup(50g) good-quality dark cocoa,
sifted
190gdark(70%)chocolate,melted, cooled
15gredgelfoodcolouring
1 tbsvanillaextract
Fresh cherries, to garnish

1 cup(120g)pureicingsugar,sifted
(^1) / 2 cup(50g)good-qualitydarkcocoa
500gcreamcheese,chopped,softened
(^1) / 4 cup (60ml) pure (thin) cream, warmed
CHOCOLATEGLAZE
80gcastersugar
100mlpure(thin)cream
100g dark (70%) chocolate, chopped
Preheatovento160°C.Greasetwo18cm
cakepans,andlinebaseandsideswith
bakingpaper.Placebutterandsugarin
thebowlofa standmixerfittedwiththe
paddleattachmentandbeatuntilthick
andpale.Addeggs,oneata time,beating
wellaftereachaddition.Beatinsour
cream.Foldthroughflour,cocoa,
chocolate,foodcolouringandvanilla
untilcombined.Divideevenlybetween
preparedpansandbakefor1 hour
25 minutesoruntila skewerinsertedin
thecentrecomesoutcleanwitha few
moistcrumbs.Coolinthepanfor
20 minutes,theninvertonto a wire rack
tocoolcompletely.
Fortheroasteddarkchocolatecream,
placechocolateona bakingtrayandroast
for 10 minutesoruntilmelted.Remove
fromovenandstir,thenreturntoovenfora
further 15 minutes,stirringevery5 minutes,
oruntilroastedandslightlydeepened in
colour. Set aside to cool to room
temperature.Placeremainingchocolate
creamingredients,exceptwarmedcream,
inthebowlofa standmixerwiththe
paddleattachmentandbeatuntilsmooth.
Addmeltedcooledchocolateandbeat
tocombine.Foldin warmcream (this will
smoothenthetexture).
Trimtopsofcakesandslicein half
horizontallyusinga largeserratedknife.
Spreadwithone-quarterofthechocolate
cream.Repeatlayering,finishing with
a layerofthecream.
For the chocolate glaze, place sugar and
2 tbsofwaterin a smallsaucepanover
mediumheat.Cook,swirlingthepan
occasionally,for3-4minutesuntila golden
caramel.Add2 tbsofwarmwater(the
caramelwillseize)andbringbackto
a simmer,graduallywhiskin creamand
bringtotheboil.Placechocolatein
a heatproofbowl.Pourhotcaramelover
thechocolate,setasidefor2-3minutes,
thenstiruntilmeltedandsmooth. Set
asidefor 10 minutestocool.
Drizzlecakewithchocolateglazeand
garnish with fresh cherries to serve.
