TURKEY + MASHED POTATOES = TURKEY SHEPHERD’S PIE
Sauté extra onions, carrots, celery, and herbs in butter until tender, then add
chopped cooked turkey and extra gravy, thinned out with milk and cream.
Simmer for 5 to 10 minutes, then transfer to a baking dish and top with cold
mashed potatoes. Bake at 350°F until filling is warmed through and topping
is golden brown, about 30 minutes. Serve with cranberry sauce alongside.
STUFFING + ROASTED VEGGIES = STUFFING BAKED EGGS
Spread leftover stuffing and extra roasted vegetables in a greased 13-by-9-inch
pan and bake until crispy. Make hollows in 6 places and crack an egg into each;
sprinkle with grated cheese and bake at 400°F until crispy. Top with chopped herbs.
SWEET POTATOES + CRANBERRY SAUCE = SWEET POTATO WAFFLES
Whisk 1 cup leftover sweet potato puree with 3 beaten eggs, 1 cup milk, and 6 Tbsp.
melted butter until smooth. Whisk 1 1/2 cups flour, 2 tsp. each baking powder and
pumpkin pie spice, and 1/2 tsp. kosher salt in a separate bowl. Stir flour mixture
into sweet potato mixture, then ladle by 1/2 cupfuls into a greased, hot waffle maker;
cook until golden brown. Serve topped with maple syrup and cranberry sauce.
