The healthy dose of
starter gives a slight
muffin-like firmness to
the dough and a lingering tang, as
well as a complexi t y o f flavour t ha t
balances well wi t h t he banana.
The same can’t be said for cake or
banana bread, in my experience –
maybe that’s because cake is best
left unadulterated. You can add
sourdough starter to any of your
pancake recipes – just add an extra
½ tsp of bicarb for every 50g (1¾oz)
sourdough starter added on top of
your usual ingredients.Good
