Chocolate Glaze
MAKES ABOUT ¾ CUP


6 tablespoons heavy whipping cream
1 tablespoon drinking chocolate
4 ounces bittersweet chocolate,
chopped



  1. Place cream in a medium mircrowave-
    safe bowl. Microwave on high for
    30 seconds. Whisk in drinking chocolate
    until well combined. Add chopped
    chocolate.

  2. Microwave on high in 30-second
    intervals, stirring after each, until mixture
    is completely smooth, about 1 minute. Let
    cool slightly before drizzling over cake.


Chocolate Peanut


Butter Swirl Brownies
MAKES 1 (13X9-INCH) PAN

Melted bittersweet chocolate adds a little
extra decadence while a ribbon of peanut
butter adds a salty complement.


11⁄3 cups chopped bittersweet chocolate
1 cup unsalted butter, cubed
1½ cups granulated sugar
1 cup firmly packed light brown sugar
1½ cups all-purpose flour
¾ cup unsweetened cocoa powder
2 teaspoons kosher salt
5 large eggs, lightly beaten
1 tablespoon vanilla extract
1⁄3 cup creamy peanut butter*
2 teaspoons cocoa nibs



  1. Preheat oven to 350°. Line a 13x9-inch
    baking pan with parchment paper,
    letting excess extend over sides of pan.

  2. In the top of a double boiler, combine
    chocolate and butter. Cook over
    simmering water, stirring occasionally,
    until melted and smooth. Turn off heat,
    and whisk in sugars. Remove from heat,
    and let cool slightly, about 10 minutes.

  3. In a medium bowl, whisk together
    flour, cocoa, and salt. Set aside.

  4. Add half of lightly beaten eggs to
    chocolate mixture, whisking until
    combined. Add remaining beaten eggs,


andwhiskuntilcombined.Whiskin
vanilla.Foldinflourmixtureuntilfew
bitsofflourremain.Spreadbatterinto
preparedpan.
5.Ina smallmicrowave-safebowl,
microwavepeanutbutteronhighuntil
softened, 15 to 30 seconds.Spoon
tablespoonfulsofwarmedpeanutbutter
ontopofbatter.Usingthetipofa knife,
swirlpeanutbutterintobatter.Sprinkle
withcocoanibs.
6.Bakeuntila woodenpickinsertedin
centercomesoutwitha fewcrumbs,
35 to 40 minutes.Letcoolcompletelyin
pan.Usingexcessparchmentashandles,
removefrompan,andcutintosquares.
