2 Totemperthechocolate:breakthe
darkchocolateintosmallpiecesand
placein a heatproofbowlsetabove

notallowthebowltouchthewater).

putthebowlintotheicewatertocool

4 Pouroutontothepreparedbaking
parchmentandusea paletteknifeor

a slabshape.Repeatthetempering
processwiththewhitechocolate,
coolingit to26Candheatingit to
30C.Drizzlethewhitechocolate
overtheslabandmixthrough.
5 Whilethechocolateis wet,
