ERE IN THE Cook’s Country test kitchen, we celebrate Thanks-
giving at least three times a year.
The fi rst celebration happens in the kitchen as the team de-
velops recipes for Thanksgiving appetizers, sides, and more. The
second comes around when the photo team prepares and shoots the fi nished
dishes in the studio. And the third, of course, is on Thanksgiving Day itself.
We’re not the only ones who celebrate more than once. Many people
have multiple Thanksgiving dinners—one for family, perhaps, and then one
(or more) for friends. When I was young, we called our second celebration
“Thanksmas,” because it usually happened between Thanksgiving and Christ-
mas. Today, many people call it “Friendsgiving.”
I love the idea of a bonus holiday. It gives you a chance to create a lighter,
less austere atmosphere that’s still brimming with gratitude—and shake up the
menu, too. I recommend our vibrant Braised Turkey Tacos (page 18) followed
by our unexpected Chocolate Pecan Pie (page 22). Both are absolutely perfect
for a celebratory gathering of friends.
Between celebrations, we’ve been hard at work to bring you a new de-
partment: “How to Make” (page 27). We’ll focus on recipes for commonly
store-bought items that are surprisingly easy to make at home and impressive
enough to merit the extra eff ort. In this issue, we tackle homemade butter.
Our simple recipe yields a creamy, fl avorful result that will earn you major
bragging rights. You’ll tell your friends, “I made this!” and they’ll be amazed.
That’s something to be thankful for.
