3 Once melted, remove the bowl and
place on a heatproof mat. Place the
digestive biscuits in a sandwich bag
and, using a rolling pin, smash them
to small chunks around 1-2cm (½-¾in)
in diameter.
4 Pour the broken biscuits together
with the marshmallows into the melted
chocolate mixture. Stir this gently as to
not melt the marshmallows. Once
everything is fully coated, pour into
the greased baking tray.


5 Melt the orange and green candy melts
in little bowls using the same method you
used to melt the dark chocolate. Once
melted, use a spoon to drip the orange
candy melts onto the rocky road using a
sweeping motion from side to side. Once
you’re happy, turn the rocky road
90 degrees and use the green candy
melts to do exactly the same.
6 Roll out the black fondant icing using a
rolling pin, then use a bat cutter to make
individual bats. Roll out the orange

SERVES 10
For the shortbread
175g (6oz) butter, softened
75g (3oz) caster sugar
175g (6oz) plain flour
75g (3oz) semolina
green paste/gel food colouring
50g (2oz) milk or plain chocolate
chips
160g (5¾oz) pack of white
chocolate melts
20 candy eyes


1 Preheat the oven to 200°C/Gas
Mark 6 and line a baking tray with
baking paper.
2 Cream the butter and sugar together
until light and fluffy. Fold in the flour and
semolina and enough food colouring
to make a bright green. Stir in the
chocolate chips.
3 Tip out the mixture onto a floured
surface, then shape into a log about
4-5cm (2in) diameter. Wrap in baking
paper and freeze for 10 minutes to
firm up.
4 Unwrap the shortbread, slice into
10 and place on baking tray (they may
crack a little but you can push them
back together as you place them on the
tray). Bake for 10-12 minutes until just
firm, then cool on a wire rack.
5 When cold, melt choco melts in a
bowl over a pan of barely simmering
water. Use to affix eyes, then drizzle
over to create ‘bandages’. Leave to set.

7 Place the eyes, teeth and smarties
over the top to create a really fun and
decorative rocky road. Chill in the fridge
for at least a couple of hours until the
chocolate has completely set.
8 Cut into square pieces once it’s ready,
then serve!
