Miso Vegetable Pilaf

Miso is one of my favourite fermented foods that I use often for
marinating fish, in dressings and as a simple snack as a soup with
seaweed. It only seemed fair to try it out in a more Asian-fusion-style
pilaf. I think it’s an absolutely winning combination.
Serves: 42 tbsp coconut oil or butter
1 (180g) brown onion, peeled &
finely chopped
2 cloves garlic, peeled & finely
chopped
3 stalks (260g) celery, diced
3 carrots (220g), trimmed & diced4 cups vegetable stock
1 cup basmati rice
3 tbsp miso paste
1 bunch Asian greens such as
bok choy, trimmed & l eaves
separatedHeat large saucepan on medium
heat, add oil, onion and garlic and
cook covered for 5 mins.
Add celery, carrots, stock, rice
and miso.Bring to boil then reduce heat to
low and cook 30–35 mins.
Add bok choy and cook further 5

Team this delicious pilaf with your favourite protein or another side
of nourishing vegies for the easiest, most flavoursome meal, that’s
ready in no time at all.
Serves: 4 as a side2 tbsp extra-virgin olive oil
1 medium red onion, peeled and
diced
1 medium red capsicum, seeded
& diced
¼ bunch coriander leaves, finely
chopped
1 cup (150g) quinoa, rinsed
½ tsp ground cinnamon
1½ cups vegetable stock1 tbsp finely sliced mint leaves
3 tbsp pine nuts, toastedLemon Garlic Yoghurt
200g Greek yoghurt
½ clove garlic, crushed
2 tsp lemon juice
Sea salt & black pepperTo make pilaf, heat saucepan
on medium heat, add oil, onion,
capsicum and coriander, stir then
cover and cook for 8 mins.
Add quinoa, cinnamon and
stock, bring to boil, then reduce
heat to simmer for 12-15 mins or
until quinoa is cooked through.
While cooking, whisk togetheringredients for Lemon-Garlic
Yoghurt.
Once quinoa pilaf is cooked,
stir through mint and pine nuts.
Serve with your choice of
protein and spoonful of Lemon
Garlic Yoghurt.
