Choc-Nut Muffi ns

Makes: 12 muffins
Dry ingredients
2 cups buckwheat flour
1 cup ground seed/nutmeal
¼ cup coconut sugar
¼ cup Organic Merchant DUST
blend of choice
1 tsp bicarb soda
½ cup halved hazelnuts (can be
replaced with frozen berries)
Wet ingredients
¾ cup plant milk
2 eggs or chia egg
replacement*
2 ripe bananas, mashed
½ cup coconut oil or butter,
melted
Preheat oven to 180°C.
In large bowl, combine all dry ingredients and stir well.
In smaller bowl, combine all wet ingredients and stir well.
Add wet mixture to dry ingredients and combine. It’s okay if
mixture is a little lumpy.
Spoon mixture into muffin tray or baking cups and cook for
20-25 mins or until skewer comes out clean.
Cool in tray for 5 mins, then transfer to wire rack.
Can be stored in airtight container.
*Chia egg replacement: 1 tbsp chia seeds + 3 tbsp water.
Combine and set aside for approximately 10 mins.
Cacao Bliss Balls

Makes: 15–20 Bliss Balls
1 cup figs, soaked in water
overnight
1 cup sunflower seeds
½ cup Organic Merchant DUST
blend of choice
1 tsp vanilla
Pinch salt
Separate figs from liquid by straining them.
Combine figs, sunflower seeds, DUST blend, vanilla and salt
in a food processor until crumbly. If mixture is not soft enough
(should stick together when pressed), add tiny drop of water
into food processor.
Take a spoon of the mix and roll into delicious Cacao Bliss
Balls using your hands. You can also coat them in coconut
flakes, rose hip powder or more cacao DUST.
Bliss balls can be stored in refrigerator for a couple days.
Ice Pops

Makes: 12 Ice Pops
500g frozen blueberries
500g coconut yoghurt
3–4 tbsp Organic Merchant
DUST blend of choice
1 tbsp organic honey or
maple syrup
Fresh mint (optional)
Add all ingredients into mixer following order above and blend
thoroughly to combine. The frozen fruit will instantly form an
ice-cream-like texture.
Fill the mixture into ice-pop molds. You can place a few
additional berries/fruit pieces into the molds first, if desired.
Top the molds with lids or sticks and place into freezer for
1–3 hours.
