SEARED COD WITH
WHITE WINE &
SAFFRON SAUCE
MAKES 4 SERVINGS

1 tbsp olive oil
1 tbsp butter
600 g cod fillets, patted dry and cut
in 4 pieces
2 shallots, finely chopped
½ orange pepper, diced
1 clove garlic, minced
¾ cup dry white wine
1 tsp saffron threads
salt and pepper to taste
chopped chives (optional)
In large saucepan, heat oil and butter over
medium-high heat. Add cod pieces and cook
until bottoms are brown, about 5 minutes.
Flip cod and cook until brown and fish
flakes easily with a fork, about 5 minutes.

to saucepan; cook, stirring occasionally,

reduced, 3 to 4 minutes. Divide cod among
shallow bowls, drizzle with sauce and serve
garnished with chives (if using).
