In blender, puree 2 cups
each baby spinach and
coconut water or milk and
1 cup each banana, frozen
mango and pineapple
until smooth. Serves 2.

Sauté 1 onion (finely
chopped) in large skillet
on medium until tender.
Stir in 1 clove garlic (pressed)
and 1 Tbsp fresh thyme;
cook 1 min. Add 6 cups baby
spinach, one 15-oz can
chickpeas (rinsed) and
1⁄3 cup low-sodium chicken
broth and simmer until
spinach begins to wilt. Stir in
1 Tbsp lemon zest. Serves 4.
