TACOS QGO

8 oz tomatillos (about 10 small),
husks discarded
1 jalapeño, halved and seeded
1 Tbsp olive oil
Kosher salt
8 small corn tortillas
6 oz sharp Cheddar cheese,
coarsely grated (about 2 cups)
8large eggs
2 cups fresh cilantro
2 Tbsp lime juice
Cooked bacon and sliced radishes,
for serving




  1. Arrange one oven rack 6 in. from broiler
    and another below that, about 12 in. from
    broiler; heat broiler. On large rimmed
    baking sheet, toss tomatillos and jalapeño
    with oil and pinch salt. Broil on top rack
    until tender and charred in spots, 8 to
    10 min. Transfer to blender.




  2. Meanwhile, place tortillas on second
    rimmed baking sheet. Top each tortilla with
    1⁄4 cup cheese, leaving slight well in center.
    Top each with an egg (cheese should pre-
    vent egg from spilling off tortilla). Broil on
    middle rack to desired doneness, 4 to 6 min.
    for a runny yolk.




  3. Add cilantro, lime juice and 1⁄4 tsp salt to
    blender and puree until smooth. Serve salsa
    on tacos with bacon and radishes if desired.

1⁄4cup (2 oz) gin
2 Tbsp (1 oz) fresh lemon juice
1Tbsp (1⁄2 oz) Honey-Pepper Syrup
(recipe below)
Pepper, for topping

Fill cocktail shaker with ice and add gin,
lemon juice and syrup. Shake vigorously,
then strain into a coupe and sprinkle with
coarsely ground pepper if desired.
Makes 1 cocktail.

HONEY-PEPPER SYRUP
Active 5 min. Total 5 min.

In saucepan, simmer 1⁄2 cup honey, 3 Tbsp
water and 1⁄2 tsp cracked peppercorns
until honey dissolves. Let cool, then strain.
Makes generous 1⁄2 cup.
