This is best made a day
ahead; keep refrigerated
in an airtight container.
Vienna almonds are whole
almonds that have been
coated in a toffee mixture.
Press them onto the cake
just before serving, as the
toffee coating will dissolve
if refrigerated.
Be careful when stirring
the mascarpone through
the whipped cream
mixture, it has been known
to split if over-handled.
To ensure layers are even,
weigh the mixture in
the pans, but be gentle
– over-handling will
deflate the mixture.
Before splitting the cakes,
refrigerate them for about
 minutes. Gently push
long skewers through the
middle of cakes as a guide.
Use a sharp serrated knife
and slowly cut barely above
the skewers.
We used instant coffee,
but if you prefer, make
very strong coffee – think
macchiato strength.
