180ml(¾c)sugar
10ml(2t)salt
AMASIRUSKS
20ml(4t)bakingpowder
500gcoldbutter,cubed
500ml(2c)amasi
2 eggs
Preheattheovento180°C.
Greasea 40x25cmbaking
sheetwithnonstickspray.
1 Mixtheflour,sugar,salt
andbakingpowder.
Rubthebutterintothe
flourmixtureuntilthe
textureislikethatof
breadcrumbs.
2 Whisk the amasi and
eggs together and add
to the flour mixture.
Combine well, then
transferthedoughto
thebakingsheet.
3 Bakefor20-25minutes
oruntildone.Leaveto
cooloutsidetheoven
for 30 minutes,then
turnout.
4 Reduce the oven
temperature to 60°C
and switch on the oven
fan. Slice the rusks into
long pieces and arrange
on the oven rack. Leave
intheovenovernightto
dry.
5 Storeinanairtight
container.
