½cuphoneymustard(egMasterFoods
brand;ormixa littlehoneyintoyour
favouritemustard,totaste)
300gbroccoli,choppedfinely
1 ½cupsgratedcheddar
1 ½cups(150g)gratedmozzarella
1 freerangeegg,lightlybeaten
3 tsp toasted sesame seeds
1 Preheatovento200°C.Line 2 oven
trays with baking paper.
2 Using a plate as a guide, cut out
6 x 22cmroundsfromthepastry.Spreadpastry
withmustard,leaving a clear 1cm border
around the edge.
3 Combinebroccoli,cheddarandmozzarella
ina largebowl;season.Placeone-sixthofthe
broccolimixtureincentreofa pastryround;
foldovertoenclosefilling,crimpingtheedgeto
seal.Repeatwithremaining broccoli mixture
and pastry rounds.
4 Placepiesontrays.Brushwitheggand
sprinkle with seeds; cut 4 slashes on top of each.
5 Bakepiesintheoven for 25 minutes or until
golden and puffed.

of step 3; store, covered, in the fridge.

free-rangechickenschnitzels (850g in total)
½cupplainflour
2 freerangeeggs,lightly beaten
2 Tbspoliveoil
60gbutter
6 briochebuns
¼cupaioli
APPLESLAW
¼cupbuttermilk
1 Tbspoliveoil
2 tspDijonmustard
1 Tbsplemonjuice
1 tspcarawayseeds,toasted,crushed coarsely
2 cupsshreddedpurplecabbage
½redapple,cutintomatchsticks
½bulbbabyfennel,sliced thinly,
frondsreserved
1 cuplooselypacked flat-leaf parsley
leaves, torn
1 Make apple slaw (see below).
2 Processsourdoughuntilfinecrumbsform.
Transfertoa plate.Coateggplant/haloumiin
flour;shakeoffexcess.Dipeggplant/haloumi
in egg, then coat in breadcrumbs.
3 Preheattheovento120°C. Line an oven
tray with baking paper.
4 Heathalftheoilandhalfthebutterina
largefryingpanovermedium-highheat;
cookhalftheeggplant/haloumifor2 minutes
oneachsideoruntilgoldenandcooked
through.Transfertolinedtray;keepwarmin
oven.Repeatwithremaining oil, butter and
eggplant/haloumi.
5 Splitbunsinhalf.Spreadbunbaseswith
aioliandtopwitheggplant/haloumi,apple
slawandbuntops.(Ifusingschnitzels, halve
them so they fit in the buns.)
APPLESLAW
Whisktogetherbuttermilk,oil,mustardand
juiceina largebowl;seasontotaste.Addseeds,
cabbage,apple,fennel,reservedfronds and
parsley, and toss to combine.
TIPSWeusedPinkLadyapples,oryoucould
trya greenvariety.Youcouldalsousepanko
breadcrumbs instead of making your own.
