125ml(½c)tomatosauce
60ml(¼c)Worcestersauce
60ml(¼c)chutney
2,5ml(½t)eachcayenne
pepper,groundcuminand

Preheattheovento
200°C.Puta wirerackon
a bakingsheetandgrease
wellwithnonstickspray.
1 Seasonthechicken

wingsalloverwithsalt
anda generousamount
ofpepper.
2 Mixtherestofthein-
gredientsandruball
overthechickenwings.
Arrangeonthewire
rackandroastfor
20-25minutesoruntil
thewingsaregolden
brownanddone.
3 DipInthemeantime,
heattheoilina sauce-
panandfrytheonion
andgarlicuntilsoft.Add
therestoftheingredi-
entsandbringtothe
boil,thenturndownthe
heatandsimmerslowly
for 5 minutes,stirring
everynowandagain.
4 Serve the wings with
the dipping sauce on
the side or drizzled over

BILTONG SPICE CHICKEN WINGS
WITHMONKEYGLANDDIP

If you’re South African, chances are you grew up
with biltong. These chicken wings are seasoned
with spices similar to those used on the popular
dried meat.

SERVES 4
PREPARATION: 10 MIN
COOKING:1 HOUR


4-6chickenpieces
250ml(1c)fizzycola
(Cokeworksbest)
30ml(2T)soysauce
45ml(3T)brandy
1 onion,chopped
4 garliccloves,chopped
TOSERVE
2 springonions,chopped,
andfreshherbs(optional)


Preheattheovento180°C.
Greaseanovenproofdish
withnonstickspray.Keep


a sheetoffoilhandy.
1 Arrangethechicken
pieces,skinsidedown,
intheovenproofdish.
2 Mixtherestofthein-
gredientsandpourover
thechicken– makesure
themarinadecomplete-
lycoversthechicken.
3 Coverthedishwithfoil
andputintheovenfor
30 minutes.Remove
fromtheoven,turnthe
chickenpiecesover,
coverwithfoilagainand
returntotheovenfor
another 15 minutes.
4 Removethefoiland

15 minutesoruntil
thechickenistender
andthesauceis
sticky.
5 To serve Sprinkle the
spring onions and herbs
on top (if using) and
serve.

drink is used in a marinade that turns into
a tasty sticky sauce.


For an equally delicious
version you can replace
the cola with 30ml (2T)
each honey and brown
sugar if you prefer. You
can also leave out the
b ra n d y.

Braaiing the chicken
adds a smoky flavour.
