BOLOGNESE AND POTATO PIES

2 tbsextravirginoliveoil
200gskinlessspeck(fromdelisand
butchers),trimmed,cutto3cmbatons
1 largebrownonion,finelychopped
1 celerystalk,finelychopped
1 carrot,finelychopped
3 garliccloves,crushed
1kgporkandvealmince
1 cup(250ml)beefstock

(^1) / 4 bunchflat-leafparsley,leaves
picked,finelychopped
2 tbstomatopaste
2 x 400gcancrushedtomatoes
1 tbs brown sugar
MASHEDPOTATO
6 (600g)desireepotatoes,peeled,
cutintolargechunks
(^3) / 4 cup(180ml)pure(thin)cream
100gunsaltedbutter,chopped
(^1) / 2 cup(40g)finelygratedparmesan,
plus extra to scatter
Heatoilin a largedeepfrypanoverhigh
heat.Addthespeck,onion,celery,carrot
andgarlicandcook,stirringfrequently,
for5-6minutesoruntilspeckbeginsto
brown.Addminceandcook,stirringand
breakingupwitha woodenspoon,for
6-8minutesoruntilmincebeginsto
brown.Addthestock,scrapingthe
bottomofthepanwitha woodenspoon.
Stirin theherbswiththetomatopaste,
crushedtomatoesandsugar.Bringto
theboil,reduceheattolowandsimmer,
stirringoccasionally,for35-40minutesor
until bolognese has thickened. Season.
Meanwhile,forthemashedpotato,
placepotatoesin a saucepanandcover
withcoldwater.Bringtotheboil,reduce
heattomediumandsimmerfor20-25
minutesoruntilpotatoesarecooked.
Drainandreturntopan.Stirin cream,
butterandparmesan.Returnpantolow
andcook,stirring,for5-6minutesoruntil
parmesanhasmeltedthrough.Season.
Coverandkeepwarmuntilreadytouse.
Heatgrilltohigh.Dividebolognese
mixturebetween6 x 1-cup(250ml)pieor
heatproofdishes.Spoonovermashand
scatterwithextraparmesan.Placeona
largeoventrayandgrillfor10-12minutes
or until golden. Serve immediately.
