SAUSAGEROLLS

If pastrygetstoosoftwhenworkingwith
it, place in freezer for 5 minutes to firm up.


100gunsaltedbutter
2 smallleeks,thinlysliced
2 garliccloves,crushed
2 tbsthymeleaves,finelychopped
2 tbsfinelychoppedflat-leafparsley
1 cup(250ml)whitewine
2 tsptoastedcorianderseeds,crushed
2 tsptoastedcuminseeds,crushed
2 tsptoastedcarawayseeds, crushed,
plusextratoscatter
2 tspsmokedpaprika
1 tsp onion powder


1 egg,lightlybeaten, plus extra,
tobrush
1 cup(70g)freshsourdough
breadcrumbs
400gkangaroomince(fromspecialty
butchers– substitute beef, pork or
lambmince)
300gbeefsausagemince
4 sheets frozen puff pastry, defrosted

Heatbutterin a largefrypanoverhigh
heat.Whenthebutterstartstofoam
addleek,garlicandherbs.Stirtocoat
in thebutter.Reduceheattomedium
andcook,stirringfrequently,for8-10
minutesoruntilleekhassoftened.Add
wine,scrapingthebottom of the pan with
a wooden spoon.

Stirin thespicesandonionpowder.
Seasonthencook,stirring,fora further
4-5minutes.Removemixturefromheat
andrefrigerateuntilcooledcompletely.
Placetheleekmixturein a largebowl
withegg,breadcrumbsandbothminces.
Seasonandmixtocombine.Dividethe
mincemixtureinto8 equalportions.
Preheatovento220°C.Line2 large
bakingtrayswithbakingpaper.Cutpastry
sheetsin half.Placea minceportiondown
thecentreofeachpieceofpastryand
brushedgeswithextraegg.Rollupto
enclosefilling,andcutinto4 pieces.
Placeontrays,seamsidedown.Brush
witheggandscatterwithextracaraway
seeds.Bakefor30-35minutesor until
golden. Serve immediately.
