SLICE OF HEAVEN!


STRAWBERRY& ALMONDFRIANDSLICE
MAKES 16 PREP+ COOK 50 MINS+ STANDING+ COOLING

TIP
Store slice in an
airtight container
at room
temperature up
to 3 days.

For lunchboxes or arvo tea, there’s nothing better than a classic slice


✦ 6 egg whites
✦ 155g unsalted butter,
melted
✦ 2 tbsp milk
✦ 1 tsp vanilla extract
✦ 1 ½ cups almond meal
✦ 1 ½ cups icing sugar, plus
2 tsp extra to dust
✦ ½ cup self-raising flour

✦ 250g strawberries,
sliced thinly
✦ 1 / 3 cup flaked almonds

1 Preheat oven to 180°C. Grease
a 20 x 30cm rectangular slice
pan, line base and long sides
with baking paper, extending
the paper 5cm over the sides.

2 Place egg whites in a medium
bowl, whisk lightly with a fork
until combined. Add butter,
milk, vanilla, almond meal, sifted
icing sugar and flour, stir until
combined. Pour mixture into
pan, smooth the surface.
3 Bake base 10 mins. Remove
from oven, top with strawberries

and sprinkle with almonds.
Bake a further 25 mins or until
a skewer inserted into the centre
comes out clean. Leave slice in
pan 10 mins before transferring
to a wire rack to cool.
4 Just before serving, dust with
extra sifted icing sugar.
