KOFTA KEBABS WITH


TZATZIKI IN PITTAS


How to cok


For the pittas
Empty the contents ofyour pack ofyeast into the cup of warm water
and place in a mixing bowl. Add the lour and salt and oil and mix
well untilyou get a slightlywet dough. Removefrom the bowl and
knead a little on a loured surface. Meanwhile, clean the bowl and
add a dash of olive oil to the bowl. Make sure the entire surface of
the inside of the bowl is covered with olive oil and then replace the
dough ball, rolling it around to cover it in oil. Cover with a tea towel
and leaveto provefor an hour to two hours.

Cut into either four or eight pieces, depending on how hungry you
are or how many ofyou there are, and roll into balls (this is
enough for four large pittas or eight small ones). Roll lat and
cook on each side for iveor so minutes on the BBQ orgriddle or
until it begins to puff up or brown nicely.

For the kebabs
Mix the lamb with the cumin, coriander, thyme, sumac and
seasoning. Divide into four and shape into large, long, thin
sausages (or eight smaller ones) around a skewer. Before
cooking, drizzle a little olive oil and lemonover thekebabs. Cook
them on the BBQ, on agriddle or on a plancha for at least 10
minutes each side, turning often toget a niceeven brown colour.

When ready, slide off the skewer into the pitta.

For the tzatziki
Meanwhile mix up theyogurt, cucumber, mint and lemon juice
to makeyour lovely dippy sauce.

Put it all together with chopped littlegem lettuce and chomp it
like it’s 4am andyou’re on the way home from agreat night
out... only this is better.

These aresuper easy to makeand taste just lovely,
especially whenyou makethe pittas yourself
onthe BBQ.It might seemlikea faff to
makepittas yourself, butit’s always worth
a go– andit enablesyou to claim
bragging rights over those who bought
them, nomatter how theyturn out.

þ1 cup warm water
þ1 sachet active dry yeast
þ2½-3 cups all-purpose
flour
þ2 tsp salt
þ1-2 tsp olive oil


For thekebabs


þ500g of lean lamb mince
þ1 tsp cumin
þ1 tsp ground coriander


þLemon thyme (or thyme)
þ2 tsp sumac (if you
have it)
þ1 tsp paprika
þBlack pepper
þSalt and pepper
For the tzatziki
þ200g Greek yogurt
þFresh mint leaves
þCucumber, chopped
þJuice of ½ lemon
