EAT TO BEAT...
Multi bean chilli
Serves 4 • Ready in 30 minutes
Low-calorie cooking spray
1 large red onion, finely chopped
1 yellow pepper, deseeded and
chopped
1 red pepper, deseeded and chopped
1 tbsp Cajun seasoning
1 tsp ground cumin
1 tsp mild chilli powder
400g can mixed beans in chilli sauce
415g can baked beans in tomato
sauce
2 x 400g cans red kidney beans in
chilli sauce
400g can chopped tomatoes
150ml boiling vegetable stock
4 tbsp fat-free natural fromage frais
A small handful of fresh parsley
Vegetables, to serve
1 Spray large non-stick frying pan
with low-calorie cooking spray and
place over medium heat.
2 Add onion and peppers and
stir-fry for 5 minutes.
3 Add Cajun seasoning, cumin, chilli,
beans, tomatoes and stock. Cover,
turn heat to low and simmer for
15-20 minutes.
4 Ladle the chilli into bowls, add a
dollop of fromage frais to each one
and scatter over chopped parsley.
Serve with your favourite vegetables.
