Bagna cauda with


raw sea urchin roe


Put all the ingredients in the pan except the roe, which
will be used only at the end; bring to a boil and blend.
Place the blended mixture in a deep dish; garnish
with a generous spoonful of raw sea urchin roei.

400 g milk
1500 g heavy cream
2 cloves of garlic
80 g anchovy paste
250 g potatoes, boiled
sea urchin roe
