BREAKFAST
BEETROOT, K ALE &
POMEGR ANATE JUICE
Serves 2
Prep time: 5 minutes
6 medium sized beets, peeled
6 large kale leaves
1 cup pomegranate seeds

Pass the ingredients through a cold press juicer
and enjoy immediately or refrigerate for up to
two days. The juice will separate after a short
while, but that’s fi ne, just stir to mix.
LUNCH
AVOCADO & TOMATO
ON SOUR DOUGH
Serves 2
Prep time: 5 minutes
2 ripe avocados, peeled and roughly chopped
2 tomatoes, deseeded and roughly chopped
2 tbsp light soya
2 tbsp lemon juice
1 spring onion, thinly sliced
Toasted sourdough bread
Cracked black pepper to taste

In a bowl, toss the avocados and tomatoes with
the soya and lemon juice.

Season with pepper, sprinkle with spring
onion and place on toasted bread.
Simple yet divine!
DINNER
PR AWN FR IED QUINOA
Serves 2
Prep & cook time: 15 minutes
2 garlic cloves
2 tbsp freshly minced ginger
6-8 prawns, no shell, deveined but tail on
1 ½ cups mixed cooked veggies like carrots, corn,
beans & peas
1 tbsp sesame oil
1 organic egg
1 cup quinoa, cook as directed
2 tbsp soya sauce (or more if desired)
Garnish with toasted sesame

Heat a little nut or vegetable oil in a wok or
large pan over high fi re.

Add garlic and ginger and cook for less than
a minute, then add the prawns and toss them
around in the wok.

Add the vegetables. Then add a little sesame
oil and the egg, again tossing constantly.

Add the cooked quinoa and the soya sauce
and toss to coat all ingredients well.

Sprinkle with toasted sesame and
serve immediately.
