TENNIS-BISCUITBASE
1 x 200 gpacketTennisbiscuits
QUICK-BAKEBASE
½cup(125ml)self-raisingwheatflour
pinchofsalt
1 tbsp(15ml)butter
1 egg,beaten
1 tbsp(15ml)sugar
FILLING
5 cups(1,25litres)milk
2 stripsnaartjiepeel
2 staranise
1 cinnamonstick
2 eggs
4 tbsp(60ml)cornflour
4 tbsp(60ml)cakewheatflour
¾cup(150g)sugar
½tsp(2,5ml)salt
2 tbsp(30ml)butter
1 tsp(5ml)vanillaessence
Decidewhichbaseyou’regoingto
use.Greasetwotartdishes–about
20 cmindiameter.
Forthefirstbase,layTennisbiscuits
inasinglelayerinthetartdishes
andupthesides.Ifyouhaveto
breakbiscuits,trytodoituniformly.
Tomakethequick-bakebase,
combineflourandsaltinamixingbowl
andrubinthebutter.Addeggand
sugar,andmixwell.Pressthedough
intothetartdishesandbakeblindfor
10 minutesoruntilthesidesjust
starttoturngolden.
Tomakethefilling,combinemilk,
naartjiepeelandspicesinapotand
heattoaslowsimmer.Inabowl,
whisktogethereggs,cornflour,cake
flour,sugarandsalt.Addalittlebit
ofthewarmmilktotheeggmixture
whilewhisking.Nowaddtheegg
mixturetothemilkwhilewhiskingthe
wholetime.Cookonaverylowheat
untilthick.Removethenaartjiepeel
andspices,andstirinbutterand
vanillaessence.
Pourthefillingontopofthetart
bases.Allowtoset,andfinishwitha
dustingofgroundcinnamon.Serve
atroomtemperatureorcold.
