INGREDIENTS



  • 350g/12ozshortcrustpastry
    (shopboughtor homemade)

  • Butter,forgreasing

  • 500g/1lb2ozfreshor frozen
    pittedsourcherries, preferably
    Morello

    • 200g/7ozcastersugar

    • 4 tbspcornflour

    • A pinchof salt

    • 1 free-rangeegg

    • A littlemilk




1 .Rollouthalfofthepastryinto
a circlelargeenoughtolinethe
piedish.Pressthepastryintothe
baseandupthesidesofthedish
(don’ttrimtheexcesspastryyet).
Transfertothefridge.
2 .Rolltheremainingpastryinto
a rectangle3mm/^1 / 8 inthick.
Place it on a baking tray lined

withbakingpaperthentransfer
tothefridge.
3 .Preheattheovento200°C,
400°F,Gas6.Greasea 20-23cm/
8-9inpiedishorflutedtarttin.
4 .Forthefilling,placethe
cherries,sugar,cornflourand
saltintoa bowlandtossto
combine.
5 .Removethepiedishfromthe
fridgeandfillwiththecherry
mixture.Trimtheedgesofthe
pastrytotherimofthedish.
Removetherectangleofpastry
from the fridge and use a small

knifetoslicethepastryinto
2cm/¾instrips.Arrangeoverthe
cherriesina latticepattern.
6 .Cracktheeggintoa smallbowl
andadda fewdropsofmilk.
Whisktocombine.Usinga pastry
brush,carefullycoatthelattice
witheggwash.
7 .Transferthepietothe
preheatedovenandbakefor
aboutanhour,witha largepiece
ofkitchenfoilunderneathto
catchanydrips.Thepieis ready
whenyouseethefruit filling
bubbling through.
