For Brown Sugar Barbecue Rub
2 Tbsp. packed dark brown sugar
2 Tbsp. smoked paprika
1 tsp. salt
1 tsp. chili powder
¾ tsp. garlic powder
¾ tsp. onion powder
½ tsp. dry mustard
½ tsp. black pepper
¼ tsp. cayenne pepper
⅛ tsp. cinnamon
For Pork
1 (8-lb.) bone-in pork butt or
shoulder roast
2 Tbsp. yellow mustard
Wood chips, for smoking
Hamburger buns, red onions,
barbecue sauce, or other
desired toppings
- To make barbecue rub, stir together
all ingredients in a bowl. - Score pork with a sharp knife,
making ⅛ - to ¼ -inch-deep slits.
Rub mustard all over pork, then rub
with brown sugar rub. Wrap with
plastic wrap and chill at least 8 hours
and up to overnight. - Preheat an outdoor smoker to 250°F
and add wood chips. - Put pork on rack set over a drip
pan. Smoke 10 to 16 hours, or until an
instant-read thermometer inserted into
thickest part registers 200°F. - Remove pork, wrap in foil, and let
rest 1 hour. Shred pork with 2 forks.
Serve with buns and desired toppings.
