Cheesemaker Nick Haddow
shares his tips for putting
together a cheese plate.
There are two options, Nick
writes in his book Milk Made.
The first he calls “the
knockout blow”, where you
serve a single amazing cheese
in perfect condition. “This
is my preferred option,” says
Nick. “Serving a cheese so
good that putting anything
else on the board would
detract from it.” He suggests
a strong blue with rye and
molassesora cloth-matured
cheddarwithoatcakes.The
secondoptionisthe“multiple
choicestatement”where
youserveseveralcheeses
together.Choosemorethan
two,butlessthanfivecheeses
thataredifferentinf lavour,
texture,styleandageprofile.
Forexample,a softgoat’s
cheese,a sheep’smilkblue
and a hard cow’s milk cheese.
“What you don’t want is three
cheeses that are too similar,”
says Nick. “Your number one
rule is balance.” As for the
age-old question of bread or
crackers? “I like to taste the
cheese and enjoy its texture
without anything else.” When
it comes to accompaniments,
Nick’sadviceis“choose
somethingthatworkswith
thef lavourofthecheese
ratherthancompetingwith
it.Sugarbalancessaltyand
acidcomplementsacid.”
That’swhytheclassic
matchesofgorgonzolaand
honey,cheddarandfruitcake,
goat’scheeseandcrisppear
worksowelltogether.
