Beautiful, golden brown forest
delights, chanterelle mushrooms
are coveted for their unique
flavour that includes hints of
almonds, apricots and mild
pepper—adding a gourmet touch
to some of our favourite fall
dishes. Fans of this mushroom
hunt them in the woods from July
to September, but you can find
them easily in specialty stores or
markets. Since they are expen-
sive (from $50 per kilo and up
in season), pair them with
more common varieties,
such as gourmet mixes of
mini bellas, oyster and/or
shiitake mushrooms.
