1 Preheatovento170°C/150°C
fan.Greasea 20cmsquare
cakepan;linebaseandsideswith
bakingpaper,extending paper
2cmoversides.
2 Stirbutterandchocolatein
a mediumsaucepanoverlowheat
untilalmostsmooth.Remove from
heat,coolfor 10 minutes.
3 Stirsugarandeggsintochocolate

popcornandimmediatelypile on top
of brownie as directed.

Place1/3cup(80ml)waterandthe
sugarina largecleansaucepan.
Stirovermediumheatuntilsugar
isdissolved.Brushdowntheinside
ofthepanwithwaterasneeded
duringcookingif crystalsbegin
toform.Increaseheattohigh;boil,
uncovered,withoutstirring,forabout
5-10minutesoruntilthemixture
isbeginningtoturna deepgolden
colour(watchthemixturecloselyas
it willchangecolourquitequickly).
Immediatelyremovefromtheheat
andwhiskinthebutter.Working
quickly,pourinthepopcornallat
once,thenthesaltandstirtocoat.
Pilecaramelpopcornonthetopof
thebrownieandusethebackofa
lightlyoiledspoontoevenlycover.
Drizzle with any remaining caramel.
