How to swap
GO SLOW You don’t have to replace
all rice and pasta with vegetables you
can use a mix. If you’re just starting out
or feeding picky eaters, try swapping
about a third of your grains with veggies.
Slowly swap more vegetables and less
starch until you fi nd a mix you like.
START WITH A SIDE Try starting
with dishes where the noodle or rice
isn’t the main event. For example, try
a stir-fry on top of a small portion of
vegetable rice instead of a whole pasta
dish or a skillet full of fried rice.
CONSIDER THE DISH When choos-
ing a vegetable to use, consider the other
ingredients in your recipe. If you’re mak-
ing something spicy, choose a sweeter
vegetable, such as carrot or sweet potato.
If you’re making a family favorite, where
swaps might be more noticeable, try a
neutrally fl avored vegetable, like zuc-
chini or yellow squash.
