It has been an adventurous year for René
and Nadine Redzepi. A seven-week Noma
pop-up in Tulum was followed by journeys
to the Nordic countries, in preparation
for the restaurant’s relaunch in February- Nadine also published Downtime:
 Deliciousness at Home. (‘The dishes are very
 forgiving so it’s easy to change things up,’
 promises Nadine.) The culmination of a
 nine-year recipe-collecting project, this is no
 ordinary cookbook, but a document of the
 Redzepis’ life together – there’s the first
 thing she cooked for René (fusilli with spicy
 chicken liver sauce), and Japanese- and
 Mexican-inflected dishes picked up during
 Noma’s international sojourns. The couple
 spend a month in Mexico each year, so their
 fondness for its capital comes as no surprise.
 ‘Mexico City has beautiful markets the size
 of Copenhagen neighbourhoods,’ says René.
 Max Núñes’ Ghat House and Designer of
 the Year Philippe Malouin’s ‘stunning’ Core
 Pavilion both also charmed the Redzepis
 with their simplicity. ‘I love things that have
 practical use but also take the shape of art in
 public spaces,’ says René. ‘Art should not just
