4 x 120gchickenbreastsupremes
(seenotes)
1 cup(200g)mountainrice blend
200gbroccolini,halved
lengthways
170gasparagus,trimmed,
halved
150gsugarsnappeas
½cup(75g)unsalted
roastedcashews
½cupfreshcorianderleaves
½cupfreshmintleaves


CREAMYMISODRESSING
2 tablespoonswhitemisopaste
2 tablespoonsmirin
2 tablespoonsoliveoil
1½tablespoonsbraziland
cashewnutspread
½teaspoonsesameoil


1 Combinethemiso,mirinand
1 tablespoonoftheoilina medium
bowl.Addchicken;turntocoat.
Cover;refrigeratefor1 hour.
2 Meanwhile,cookriceina large
saucepanofboilingwaterfor
20 minutesoruntiltender.
Drain;rinsewell.
3 Makecreamymisodressing.
4 Preheatovento180°C/160°Cfan.
5 Boilormicrowavebroccolini,
asparagusandsugarsnappeasuntil
tender;drain.Covertokeepwarm.
6 Heatremainingoilinanovenproof
fryingpanoverhighheat;cook
thechicken,skin-sidedown,for
2 minuteseachsideoruntilgolden.
Transferpantooven;roast
chickenfor 15 minutes or until
cooked through.


7 Placerice,broccolini,asparagus,
sugarsnappeas,cashewsandherbs
ina largebowl.Addhalfthe
dressing;tosstocombine.
8 Servechickenwithriceand
vegetablemixture,withremaining
dressing spooned over.

CREAMYMISODRESSING
Whiskingredientsand1 tablespoon
waterina small bowl until combined
and smooth.
