Everyoneinmyfamilyloves chilli. At the age ofthree,
I was eating atchar with myparents. Both of them are
great cooks, so whether it’s my dad’sfamous peri-peri
prawns or mymom’s spicyspaghetti pomodoro,
there are alwaysfresh ingredients with bigflavours.
Mybroth recipe varies. I go bytaste and what’s available
tome, but it should always have a combination offresh
chilli, garlic, ginger, lemongrass, soya sauce, fish sauce, basil,
coriander, spring onions, vegetable stock and,for a heartier
laksa-style broth, I add tomato paste and coconut milk.
AND THE MUSIC?
Nature is my inspiration. I’ve just come backfromatwo-week
holiday in Sri Lanka, where we stayedin the jungle. I returned
feeling supercharged and really inspired. And Ifelt so at home
inacountrywhere everyone eats spicy food for every meal
ofthe day!
In 2019, I’ll be touring Europe through Januaryuntil the
middle ofFeb. It’s our biggest ever European headline tour,
culminatingwith a show at Roundhouse in London, which
isan epic 3 300-seater venue. I’m very excited about it!
