l Cut 450g halloumi into chips. mix75g plain flour with 2 tbsp za’atar. rol l the
halloumi chips in the flour mix to coat. Fill a heavy-based frying pan with enough oil
to come 1.5cm up the side of the pan. hea t until sizzling, then fry the halloumi a few
pieces at a time for 1-2 minutes, turning so they crisp evenly. remove and drain on
kitchen roll. Serve with natural yogurt, swirled with rose harissa paste.
l For a quick summer salad, griddle slices of halloumi for 30 seconds on each side
until charred. Cool a little then mix with chunks of melon, watermelon works well,
a handful of mint, a squeeze of lemon juice and a drizzle of extra virgin olive
oil. Some bulgur wheat or couscous would bulk this salad out as a main meal.
l Try this med iterranean bake. hea t a little oil and fry 2 red onions, finely chopped,
until softened. Add 2 garlic cloves, roughly chopped; 3 aubergines, cubed;
800g tinned chopped tomatoes; 2 tbsp tomato purée; 1 tsp oregano; 1 tsp
paprika; ½ tsp ground cumin; ½ tsp chilli flakes, and season with sea salt and
ground pepper. Add 200ml boiled water, bring to the boil and gently simmer
for 1 hour. Preheat the oven to 220ºC/425ºF/gasmar k 7. Pour the tomato mix into
an ovenproof dish, stir in a handful of torn basil leaves and top with 450g sliced
halloumi. Bake in the oven for 15-20 minutes until golden. Serves 4.
