it served in beautiful flower-like curls.
Pair this hard cheese with a
white wine such as riesling.
3 in foglie di castagno
Piedmont, Italy
Cow’s and ewe’s milk Produced by
Beppino Occelli, it’s aged for 18 months
before being wrapped in chestnut leaves.
This imparts a strong and savoury flavour,
with sweetness from the ewe’s milk.
Pair with a skin-contact (also referred to
as orange wine) pinot gris or a sherry.
