The taste of roasted figs folded through smooth
mānuka honey ice cream with hints of warming
ginger is the epitome of a wintertime treat.
Luscious figs add pronounced flavour and
moreish texture to the creamy base while the
natural sweetness inherent in pure mānuka honey
balances this intensely aromatic combination.


Flavour match
Gently crushed caramelised macadamia nuts and
crispy strands of toasted rosemary are heavenly
matches for the bold, classic flavours of fig and
honey. Taking cues directly from nature and
harnessing them in an elegant dish, this dessert is
a delight for the senses. Fragrant rosemary adds
a decadent crunch against the chewy texture of
the figs, while caramelised macadamias realise
the mānuka honey’s rich, toffee-like depth.


To ensure your guests enjoy the impactful
flavour from their first bite to their last, serve
with a cool, crisp white wine such as a riesling.


CARAMELISED MACADAMIAS
To make this scrumptious topping,
continuously stir 2 parts halved
macadamias to 1 part caster sugar
in a small heavy-based pan over
medium heat until caramelised.
Transfer to waxed paper to cool
before breaking into pieces.
