SUE’S COMMENT

There was an great amount

of detail in this passion fruit

and mango pudding, but I wanted to

make sure the delicate flower and

intricate red tuile on top of the sponge

were the focal points. We used some of JP’s reflectors,

cheap white foam boards, and filled the shadows,

making the image look brighter and much more

balanced. We made sure to turn the plate, so that all of

the elements of the dish could be seen. Then we placed

them on a rustic tabletop with leather armchair behind

it, just to add some detail to the background.
