YEASTED WAFFLES WITH


ROASTED STRAWBERRY SYRUP


ACTIVE 20 MIN. ✦ TOTAL 1 HR. ✦ MAKES 12 LARGE WAFFLES
COST PER SERVING 24¢

1 cup warm water


2¼ tsp active dry yeast
(1¼-oz pkg.)

3 Tbsp sugar


1½ cups whole milk,
at room temp

½cup (1 stick)
unsalted butter,
melted

2 large eggs


1½ tsp kosher salt


2 cups all-purpose
flour

¼tsp baking soda


Roasted
Strawberry Syrup,
for serving
(recipe at right)

(^1) Add the water to a large bowl, then sprinkle
the yeast and sugar on top; whisk just to combine.
Let sit 10 minutes.
(^2) Whisk in the milk, butter, eggs, and salt. Stir in
the flour and baking soda. Let this mixture sit at
room temperature for 1 hour before preparing, or
refrigerate overnight for the best flavor.
(^3) If using from the refrigerator, stir well to
combine. The batter will be wet, which gives
the waffles a delightful, lacy texture and crisp
crunch. Prepare in a waffle iron per manufacturer
instructions. Serve with Roasted Strawberry Syrup.

MAKES ABOUT 1½ CUPS

Heat oven to 425°F. On


a rimmed baking sheet,


toss 1 lb strawberries


(hulled and quartered)


with 2 Tbsp pure maple


syrup. Roast until the


strawberries have


softened and released


their juices and the


syrup has reduced


slightly. Let cool for


at least 15 minutes,


then toss with another


⅓ cup maple syrup


before serving.
