110g plain
flour60g soft
butter85g brown
sugar1 egg 2 teaspoons of
ground gingerA pinch of
saltDifferent flavours
of jamMix together
the butter,
sugar, ginger
and salt.Whisk the egg
and stir into the
mixture. Add
the flour.Knead the dough
into a ball. Cover
with cling film and
put in the fridge
for 1 hour.Dust the table with
flour and roll the
dough into a circle
as thick as a pound
coin.Cover with cling film
and make craters by
pressing pen lids and
bottle caps onto the top.Place the moon on a
greased baking tray
and bake in the oven
for 15-20 mins.Let the moon cool. Fill the
craters with jam. Break the
moon into pieces and share
